Summer Berry Icecream

Here‘s an easy dessert that can be whipped up in 5 mins and ready to eat in 3 hours.

You will need :

Selection of summer berries 250gm ea - strawberries, rasberries, blueberries, blackberries.

600ml thickened cream.

1/2 cup caster sugar

1 tsp vanilla essence

50gm (although i used 100gm packet) mini macaroons - crushed.


Grease and cover loaf tin with glad wrap.

Place 1/3 fruit at bottom of tin.

Whip cream, sugar, vanilla until soft peaks just form.

Fold a further 1/3 mixed fruit through the cream, then fold macaroons.

Pour into tin and fold gladwrap over - ensuring all cream is covered.

Place in freezer for at least 3 hours.

To serve - sit for 15 mins then carefully remove contents onto serving platter.

Sprinkle with remaining fruit and drizzle with honey.
