Broad Beans & Peas sauteed with bacon

Preparation Time 20 - 25 minutes
Cooking Time 10 minutes

Ingredients (serves 6 as side dish)

300g (2 cups) fresh broad beans from the Fallace brothers
1 tbs olive oil
3 rindless bacon rashers, rind removed, coarsely chopped
1 white onion, halved, thinly sliced
300g (2 cups) fresh peas
2 tbs chopped fresh mint
Olive oil, extra, to serve
Fresh mint leaves, to serve

Method

Place the broad beans in a heatproof bowl and cover with boiling water. Set aside for 5 minutes. Drain. Peel and discard the skins.
Heat the oil in a large non-stick frying pan over high heat. Add the bacon and onion, and cook, stirring occasionally, for 5 minutes or until the bacon is crisp and golden.
Add the broad beans and peas, and cook, stirring, for 3-4 minutes or until the beans are heated through. Stir in the mint. Transfer the bean mixture to a serving bowl. Drizzle over the extra oil and sprinkle with mint leaves to serve.
